The Grand Hyatt Hotel on 8th Avenue and corner of 35th street both literally and figuratively stands apart from the rest of the malls and hotels in Bonifacio Global City. Literally, because the hotel rose in the still relatively quiet part of the growing commercial business district, a few blocks away from its neighbors. Figuratively, well, because it’s starting to make a name for itself as a luxurious escape within the metropolis with its trademark Grand Hyatt standard of hospitality and also its excellent food and beverage offering.

The Cellar is The Grand Hyatt’s bar. And no, it’s not underground. It’s on the second floor, but once you get over that minor detail, The Cellar looks precisely what one may think a beautifully appointed wine cellar would look like, complete with bricked walls, wrought iron details, a softly lit romantic atmosphere, and walls of fine vintages on display.

The Cellar has eight climate-controlled wine cellars that house over 800 bottles with 179 different brands. That is a lot of wine to be familiar with, but finding one to enjoy does not necessarily have to be a daunting experience. They have sommeliers on hand ready to give their recommendation, and even a digital sommelier to help you choose the perfect wine for your mood or occasion.

Every first Wednesday of the month, The Cellar hosts Cellar Talks on the featured wines of the week served with fantastic cheese and charcuterie. There, the sommeliers and chefs are on hand to answer any questions one might have about the vintages on display and guests, in turn, get to try and enjoy wine that may have previously been under their radar.

Last Fourth of July, in lieu of a fireworks display to celebrate Independence Day in the United States, The Cellar Talks featured California wines by Callaway.

Callaway Sauvignon Blanc 2015–Green and flinty. Dry, crisp, and clean, fresh grapefruit, and nectarine aromas. Ripe melon and citrus flavors with slightly herbal characteristics.
Callaway Cabernet Sauvignon 2015–Bold, dark red color. A hint of licorice complements the rich aromas of blackberry and boysenberry. The jammy fruit-forward flavors are balanced nicely with spice, a silky mouthfeel, and smooth texture
Callaway Merlot 2015–Dark ruby color. Nose of spiced berries, blueberries, cassis, some licorice and quite earthy. It has flavors of ripe and juicy cherries, some raspberries, prune, and date with a butt of black pepper. Medium body and a long finish

The Cellar is open Mondays to Sunday, brunch at 11:00 AM to 2:30 PM, dinner at 6:00 PM to 11:00 PM.
