The second leg of the Women and Tipple Series on March 27 was all about gin. Held at Discovery Primea’s The Gin Library at Gilarmi Lounge, the best gin and tonic hangout in Manila, this installment featured gin brands from Booze Online: floral Hanami GIn, earthy Empress 1908 Gin, and sweet Langley’s Old Tom Gin.

DrinkManila’s editor-in-chief Tatum Ancheta kicked off the event by giving a short talk about the evolution of Women and Tipple Series, the current state of the male-dominated beverage industry, as well as loads of trivia on the role of women throughout booze history. Women’s contributions to the world of spirits are frequently overlooked. It’s not common knowledge that women invented beer or that a woman pioneered the distillation process that paved the way on how current spirits are distilled. There was even a time wherein it was illegal for women to step foot in a bar!

The Women and Tipple Series is a set of tasting events that foster spirited conversations led by women about what women like to drink. As women, there are a lot of misconceptions and stereotypes about why we drink, what we like to drink, or what we’re like when we drink. Most often women are underestimated about our knowledge about drinks. Even during Women and Tipple series, we would get comments from men like, “Do Filipinas even know what a tipple is?” or “Finally, women are drinking, now if we can only get them to drink whisky (a.ka. Scotch)”. Oh, men, we would love to invite them during Women and Tipple, so they can meet like-minded women who probably have more whisky bottles in their home bar than men.

The tasting events in Manila are generally run by and catered to men. And while there’s nothing wrong with that, it leaves the women who are also interested in spirits at a disadvantage. Most often, during spirit tasting sessions, the ratio to men and women is 2 to 10. It is not because women are not interested in attending, but some of them feel that it can be intimidating and men tend to take over the conversation.

DrinkManila, being founded and run by women, knows this firsthand, and wanted to create events to accommodate the needs of women who want to know more about the wonderful world of spirits and want to drink better. Women and Tipple address these things and seek to create a safe and supportive environment for women to enjoy, explore, and learn about spirits free from judgment surrounded by like-minded people. Thanks to our men speakers and the men behind the bar who encourage the learning space, the supportive atmosphere emboldened the women to examine the spirits more closely and explore the nuances of each bottle.

The second leg of Women and Tipple series introduced three gins to the guests. Led by Booze Online’s Chester Cabrera, he presented the history and taste profile of Hanami Gin, Langley’s Old Tom, and Empress 1908. Guests were encouraged to be curious and fearless in asking questions, to get to know the brands and differences in how each gin is created.

After guests had a taste of the featured spirits, we built upon their drinking experience by showing them how to use the gins in fun cocktails together with Monin gourmet flavored syrups.

DrinkManila’s resident mixologist, Icy Mariñas, went behind the stick to mix the cocktails specially created for this event, walking the guests through the highlighted flavors chosen for each of the drinks.

First up was the pretty Purple Unicorn featuring Empress 1908 Gin, topped with sweet cotton candy that guests got fresh from a cotton candy machine. Next, Icy whipped up fragrant Lady Macbeth featuring Langley’s Old Tom Gin, made with aquafaba (chickpea brine) instead of egg white, making it a creamy, foamy vegan cocktail. Last but not least is the fiery Furiosa featuring Hanami Gin, which intrigued guests because it has kimchi flavors, giving it a sour spiciness that guests were not used to in cocktails, but thoroughly enjoyed.

The recipes are easy to follow and make at home, and Icy gave some of the guests a shot at mixing and shaking behind the bar.

Purple Unicorn

Furiosa

Furiosa takes its name from the female lead of the dystopian film Mad Max: Fury Road. Brave, fierce, and fearless, Furiosa fought to be free. Our fiery cocktail mixes sweet with sour and spicy in one sip. Hanami Gin’s floral notes anchor this drink as we add fruity sweetness and spice to it. The kimchi’s sour, spicy, and umami flavors add complexity and intensity to Furiosa, resulting in a cocktail that will keep you coming back for more. Click this link for the recipe

Many spirit tasting sessions or festivals feature male-centered activities or lifestyle brands, like a haberdashery or barbershop. To give our guests an experience that might be more suited to their interests, we invited Benefit Cosmetics Philippines, a brand founded by women and led by women, to pamper them during the event. To make sure their eyebrows stay on fleek some lucky ones got to have an individual brow consultation from Benefit’s National Brow Artist Celina Fernandez. The Benefit Brow Bar makes a refreshing addition to the usual activities during spirit tastings.
