Beat the summer heat with Hi Noon, a light and refreshing cocktail that will cool you down in the hottest of days. Its pleasing pale yellow color is calming to the eyes and hides the lychee sweetness that doesn’t go overboard with just a hint of spicy ginger to give it a bit of a kick. 

Ingredients:

45ml gin
3 pieces lychee from the can (muddled)
2 cubes ginger (muddled)
45ml lychee juice from the can
15ml lemon juice
10 ml simple syrup
ginger ale (to top)

Directions:

Muddle lychee, and ginger. 
Add ingredients except for ginger ale into shaker. 
Add ice and shake. 
Strain the liquid into a highball glass with ice.
Place three lemon wheels in the glass and put three halved lychees on a cocktail pick and use as garnish.
