The Mondrian Hong Kong, launched in late 2023, is a welcome addition to the hotel scene of the metropolis and offers a one-of-a-kind experience that combines sophisticated design with exceptional hospitality. The first Mondrian establishment in Greater China, located in the vibrant Tsim Sha Tsui neighborhood, is an ode to the city’s rich heritage, featuring motifs that pay homage to its storied past. Situated 40 floors above ground, the hotel treats guests to breathtaking views of Victoria Harbour and the island skyline. With 324 well-designed rooms (including 12 suites), top-notch wellness facilities, and a focus on cultural collaborations, Mondrian Hong Kong delivers a unique stay that reflects the energy of this dynamic city. Named after famed Dutch modern abstract artist, Piet Mondrian, design is a major component in all Mondrian Hotels. Mondrian Hong Kong appointed Amsterdam-based designer Karin Krautgartner of byKK to work her magic on all of the rooms and public areas. She was inspired by the architecture, views, and location of the hotel, as well as Hong Kong’s rich history, and utilized key pieces by local artists. Several elements within the hotel pay homage to Hong Kong’s maritime heritage. The suite features a stylish lounge area perfect for entertaining, a connecting bedroom, and two washrooms (one with a bathtub) and a ‘lookout’ table and chair. The beautiful hand-painted minibar is stocked with coffee maker water purifier, spirits, and bar sets, allowing you to craft your own cocktails. They’ve also launched The Corner Shop, a street-level art space located next to the hotel that features guerrilla art, curated cool, cultural events, and other artistic endeavors. Legendary butcher Dario Cecchini, named by New York Times as “the world’s greatest butcher” and featured on Netflix’s “Chef’s Table,” believes that all cuts of meat can be utilized when cooked properly and applies the nose-to-tail concept to Carna, which strives to eliminate waste and promote sustainability. Sala la Luce entry way of Carna Renowned local designer Joyce Wang lent her artistic vision to the creation of Carna’s interiors. The marbled ceilings, opulent curtains, stained glass panels greet you as you enter, making guests feel like they’re some chapel in Italy. A welcome drink and canapés start at the foyer (Sala la Luce), surrounded by stained glass art inspired by ancient wall frescoes from Roman times to narrate three themes: Tide of Gathering, The Joyful Feast, and Celebrating the Harvest, a taste of the feast to come. The fridges showcasing the meat and wine proudly display the signature cuts of meat on offer. Guests can choose to dine at the formal dining room to the left (La Riserva) or the bar area (Bar Luce) to the right, either way, the floor-to-ceiling windows showcase stunning views from the 39th floor. The vibe is sophisticated, but also cozy and intimate, perfect for dates, family gatherings, and other celebrations. There’s also a diagram of a cow at the back with annotations describing the 18 beef cuts used at the restaurant. It’s any carnivore’s dream. The Chianti Tartare is prepared tableside, with the staff hand-chopping and tenderizing the rump cut of beef and flavoring it with garlic, paprika, lemon, chili, Chianti salt, and olive oil. Served with toasted bread, the taste is flavorful and savory with a bit of heat from the chili. The Fascia Di Reale (beef chuck flap USA Wagyu M5-6 from Snake River Farm) is grilled to the perfect medium-rare and cuts like butter. Carna offers an array of beautiful steak knives for guests to choose from, adding to the personalized dining experience. Carna is their signature cocktail. Made with beef fat washed bourbon, salted maple syrup, and cumin bitters, this savory cocktail is perfectly balanced and lip smackingly smooth. The beef essence is not overpowering at all and the salted maple syrup and cumin bitters complement it well. The branded ice with Carna’s cow logo is a special touch. Porcini uses Wedges Gin, Rosso Amaranto Vermouth, Amaro Santoni, salted chocolate bitters, and garnished with upcycled porcini dark chocolate. This riff off the negroni is complex, with layers of sweet bitterness and an edible garnish that completes the flavor profile. They also offer low-ABV and no-ABV drinks, as well as an extensive wine list.
