Three Little Pigs, an intimate speakeasy bar located along Kapitolyo hosts bi-monthly cocktail classes called Piggy Couch Sessions: Classic Cocktails 101. Patrick Cuartero, the man behind cocktails bars such as ABV, Three Little Pigs, and Prisma Boracay Piggy Couch Sessions is the brainchild of Patrick Cuartero, a prominent name in the beverage industry, who founded ABV at Jupiter street, Prisma in Boracay and Drinkka.com to name a few. He discovered his love for cocktails by frequenting popular bars in New York, and was inspired to share the basics of mixology, pay it forward, and educate people on how to appreciate the world of cocktails. The class covers topics like how to properly appreciate a drink, how liquor is made, and how classic cocktails are made. Patrick’s engaging and witty spiels on liquor and cocktail-making, plus interesting facts from his experiences, made it easy to understand the lesson. He highlights the importance of the senses when it comes to appreciating drinks. Of course, taste is very important, but what most people don’t pay attention to is their sense of smell when they drink a cocktail. Together with how the cocktail is presented, it’s form, color, and garnish, it completes the whole experience of a beverage that people enjoy. Make sure your mixing glass is full of ice The right tools and essential techniques were also covered, and Patrick demonstrates the fundamentals of shaking and stirring. As one of the most important ingredients of the cocktail is ice, he stresses its importance as it can make or break a drink. Putting the finishing touches on an Old Fashioned To demonstrate the shaking method, he chose to make the classic rum cocktail, Daiquiri. It’s a simple cocktail that is easy to mess up if you don’t know how to properly make it. For stirring, it was the whisky-based Old Fashioned. After each demontration, students get to apply what they’ve learned and go behind the bar to create the cocktail on their own. Our class made their own versions of Amaretto Sour, Vesper, and Sazerac to name a few. Having the chance to actually make cocktails on the spot allowed us to really appreciate not just the spirits, but also the bartenders behind the bar. Amaretto Sour and Old Fashioned Piggy Couch Sessions: Classic Cocktails 101 takes place on Saturdays from 3:00 pm to 6:00 pm for Php 2,200 per person and is limited to 10 participants per class. These classes fill fast, so make sure to secure your spot early. Best to pick a seat in the middle of the bar to get a good view of the lessons.
