Share on Facebook Share on Twitter Share on Pinterest Location: Unit A7/B8 Burgos Parklane, Forbestown Road, Bonifacio Global City, Taguig (just above the restaurant 2nd’s) Operating Hours: 5 p.m. onwards, daily Bitters is an apothecary-themed bar created by the same owners of ABV, Mandalay, and Belle and Dragon. The concept of the place is inspired by apothecary and medicine shops and it is reflected from the interior all the way down to the drinkware and menu. The bar itself is designed to look like an operating table where guests can indulge in drinks served in beakers, flasks, and medical and chemistry lab equipment. According to Lee Watson, one of the proprietors of the bar, the place also plays around with the idea of being a “singles” bar. He says, “The tagline is ‘Walk in bitter. Walk out taken’. “We don’t want to take ourselves too seriously. Here we want a menu which is medical in theme, prescription in theme, doctor in theme, but at the same time, kind of fun and playful,” explains Lee. The big rounded chandelier on the right side is the entry way from the 2nd’s restaurant downstairs The bar is reminiscent of an operating table with its medical equipment Beakers and chemistry-related equipment are used as containers and drinking vessels A wide collection of bitters from the bar Fresh concoctions from the bar kitchen For the first draft of the signature cocktail menu they serve about eight cocktails–Pharmaceutical Gin Fizz, Lychee-Tarragon Sangria, Parisian Ale, 5 Spice Mojito, Ward 75, Negroni’s Love Child, and our favorites from the menu, Doctor’s Gimlet (gin, spice agave, Kamias Saccharum, Green Chartreuse, and quinine bitters) and Herb Garden (Zubrowka Bison Grass vodka, Bianco Vermouth, fennel bitters, lemon juice, and tarragon). The selection is mostly gin with an aromatic flavor profile. It plays with classic bittering herbs, like cinchona bark or quinine, and wormwood. Snake Fruit Margarita Parisian Ale – gin, Elderflower liqueur, ginger ale, and sage Herb Garden – Zubrowka Bison Grass vodka, Bianco Vermouth, fennel bitters, lemon juice, and tarragon Pharmaceutical Gin Fizz – gin, black plum liqueur, almond syrup, lemon and lime juices, Scrappy Lavender bitters, egg white, and soda water Doctor’s Gimlet (gin, spice agave, Kamias Saccharum, Green Chartreuse, and quinine bitters) The bar is expected to attract young urban professionals given the location of the place in the hip part of BGC. But as Lee says to singles: “Be careful; you’ve been warned!” Don’t forget their tagline: Walk in bitter. Walk out taken. Video and photos by Star Sabroso
