DrinkManila.com in partnership with Discovery Primea hosted the third third leg of the Women and Tipple Series in celebration of Women’s March last March 21 at Edge with a special liqueur tasting from the oldest distillery in the Philippines, Destileria Limtuaco & Co.’s line of Philippine Craft Spirits: Manille Liqueur De Calamansi, Manille Liqueur de Dalandan, Paradise Mango Rum, and Amadeo Coffee Liqueur.

Mixologist Kathryn Eckstein Cornista and Destileria Limtuaco’s Business Development Manager, Aaron Aw introduced these export-quality liqueurs and the story behind each bottle. DrinkManila’s mixology expert Icy Mariñas taught guests recipes for aperitivos and low-ABV cocktails that highlight the unique flavors of Destileria Limtuaco & Co.’s local craft spirits. We also welcomed guests who wanted to try mixing behind the stick. DrinkManila’s editor-in-chief Tatum Ancheta talked about the first online drink magazine in the Philippines and discussed how the beverage industry is evolving with women who appreciate a good tipple. The night was filled with useful learnings about mixology and insights about misconceptions about what women like to drink and what they really enjoy drinking.

To accompany the cocktails, Edge served Grilled Octopus (Korean marinade, housemade pickles, Spicy Tuna Napoleon (crispy tapioca, nori, avocado-wasabi cream, ginger-soy vinaigrette, Cochifrito (chickpea cake, grilled peaches, shallot jam), Kataifi Prawns (guacamole, sweet chili sauce, salsa brava), and Fried Chicken & Pancakes (crispy boneless wings, aerated pancakes, syrup).

And because it is an exclusive women’s only event, our friends at Benefit Cosmetics Philippines, a brand founded by women, led by women, and made for women, prepared a mobile brow bar for all of our guests who want their brows retouched and get brow consultations. As an added treat everyone took home Benefit Cosmetics kits.

Here are the recipes created for the night to highlight Destileria Limtuaco & Co.’s line of Philippine Craft Spirits: Manille Liqueur De Calamansi, Manille Liqueur de Dalandan, Paradise Mango Rum, and Amadeo Coffee Liqueur:

Dalandan Spritz

Dalandan Spritz (see video recipe) 

This is a sweet, deceptive drink with a hint of citrus. You’ll almost forget that this has alcohol in it.

INGREDIENTS:

  • 45 ml Manille Dalandan Liqueur
    45 ml Aperol
    10 ml DaVinci Gourmet Strawberry Syrup 120 ml Martini Prosecco/sparkling wine 30 ml soda water

DIRECTIONS:

  1. Add ingredients except Prosecco and soda water in a shaker.
  2. Add ice and shake.
  3. Strain into a wine glass with ice.
  4. Add soda water and Prosecco. 5. Garnish with dalandan wheel.
Super Nova

Super Nova

Super Nova was created by DrinkManila.com for the La Fuerza Party last March 1, 2018, as inspired by the Nova Gallery. This light, refreshing cocktail puts the particular sourness of the calamansi under the spotlight without being too tart. This low-abv cocktail is perfect for those who want to enjoy a cocktail without worrying about getting too buzzed.

Ingredients:

  • 45 ml Manille Calamansi Liqueur
    20 ml calamansi concentrate w/ honey 120 ml sparkling water
    60 ml soda water
    3-5 dashes Angostura bitters

Directions:

  1. Put all ingredients except sparkling water and soda water in the shaker with ice.
    Shake and pour (do not strain) into the glass.
    Garnish with fresh calamansi wheels.4. Top with sparkling and soda water.

Steal my Sunshine

Summer is almost here, and Steal my Sunshine is the perfect drink to welcome it. The mango sweetness reminds you sunny days, with that tart kick from the calamansi to bring you back to the present.

Ingredients:

  • 60 ml Paradise Mango Rum
    15 ml Manille Calamansi Liqueur 20 ml Calamansi Shrub
    10 ml Da vinci Tropical Passionfruit

Directions:

  1. Place ingredients in a shaker with ice.
    Shake and pour into glass.
    Garnish with dehydrated calamansi wheels and dried mango

How to make the shrub:

  • 250 g calamansi wheels (deseeded) 250 g raw sugar
    1 tbsp pink peppercorns, crushed 250 ml cane vinegar or to taste
  1. Put calamansi and pink peppercorns in a bowl and cover in sugar.
  2. Cover and leave for at least 24 hours
  3. Add cane vinegar and strain.

Bloody Espresso (see video recipe) 

This long drink is a delightful beverage to enjoy on hot, humid afternoons or even cool evenings. The coffee liqueur is complemented by the sour cranberry juice, and the mint adds freshness. Inspired by Southern-style drinks, this drink has a sweet-tanginess to it with a coffee rush that will make you feel like the belle of the ball. We can almost imagine sipping this with friends on a porch, overlooking a magni cent garden view.

Ingredients:

  • 50 ml Amadeo Coffee Liqueur
    180 ml Cranberry Juice
    1 dash or 10 drops of Bob’s Chocolate Bitters Fresh mint
    coffee jellies

Directions:

  1. Build in glass.
    Roll around 10 mint leaves, clap, and drop into glass. 3. Add ice and stir.
    Top with crushed ice.
    Garnish with fresh mint and coffee jellies.
