Ingredients: 60 ml Bacardi 8 15 ml Calamansi Shrub 1 dash Orange Bitters Dehydrated calamansi wheels Directions: Chill glass with ice and set aside. Add all ingredients in a mixing glass, add ice, and stir Strain in a rock glass with ice. Garnish with dehydrated calamansi wheels How to make the shrub: 250 g calamansi wheels (deseeded) 250 g raw sugar 1 tbsp pink peppercorns, crushed 250 ml cane vinegar or to taste Put calamansi and pink peppercorns in a bowl and cover in sugar. Cover and leave for at least 24 hours. Add cane vinegar and strain.
