Due to its magnificent natural blue color, the Blue Pea flower (Clitoria ternatea) has been a sought after ingredient behind the bar for quite a while now. Distillers love experimenting with it for their blue colored gins like Empress 1908, Brass Lion Butterfly Pea Gin, Six Dogs Blue, Ink Gin, and the local Sirena Blue Pea Gin. And Bartenders love to use it in their cocktails or infusions due to the dark cobalt blue hue that it adds to any drink. For centuries it has been consumed as a brain booster, memory enhancer, anti-stress, and even as an anti-aging agent. When steeped in hot water, it makes a strikingly vibrant colored tea. Butterfly pea flowers are sensitive to pH, so the color changes to a magical purple or pink shade when combined with any low pH ingredients like tonic water or citruses. The changing color makes a great spectacle for any cocktail or mocktail drink.

Blue pea has an earthy and woody note to it. For drinks and infusions, it goes well with floral notes. We love mixing this in lavender and hibiscus. For this recipe, we tried mixing it with rose tea, and it’s just marvelous!

Try this fun lemonade to spark magic in your chilled drinks. We steeped the fresh blue pea flowers in water for a few hours and turned them into ice cubes. When the blue pea ice is mixed with the lemon juice, rose liqueur, and sugar syrup, the drink turns into a magical two-toned periwinkle and pink color.

You can alter the rose liqueur to rose tea or rose syrups so even kids can enjoy its lovely tones.

Ingredients
50 ml lemon juice 
15 ml rose liqueur
30 ml simple syrup 
3 blue pea ice cubes with rose tea petals 
soda water to top

Directions

Pour lemon juice, rose liqueur, and simple syrup in a mixing glass. 
Stir and pour into a glass with blue pea ice cubes with rose tea petals. 
Top with soda water. 
Garnish with lemon peel.
