A riff on the classic Tom Collins. Tammy Tavera of The Bonbon Club has made it his own by adding his own ginger shrub. He uses Beefeater gin because it is dry and balances the sweetness of the other ingredients. This drink is refreshing and sweet, with a hint of ginger ale (from the ginger shrub and the soda water).



  • 45 mL Beefeater Gin
  • 45 mL homemade ginger shrub
  • 15 mL lemon juice
  • 15 mL simple syrup
  • soda water


  1. Combine gin, lemon juice, shrub, and syrup in a shaker.
  2. Add ice.
  3. Cover and shake until chilled.
  4. Strain into a Collins glass with ice.
  5. Top with soda water and garnish with a lemon wedge.
