(Read about Don Papa Rare Cask) The rise of dark spirits finished in sherry casks created a series of complex bottling in the market which gave consumers new products to explore. The new Don Papa Sherry Cask Finish marks another innovation inthe Bleeding Heart Rum Company and in the local rum scene. Bottled at 45% ABV, Sherry Cask Finish uses the original Don Papa 7 years rum which is first aged for four years in American Oak ex-bourbon casks, followed by 18 months in four different types of Sherry Casks–Fino, Pedro Ximenez, Cream, and Palo Cortado. Don Papa Rum Sherry Cask Finish According to Don Papa’s Senior Regional Brand Manager Cristhel Molina, the new product is inspired by Baroque, a highly ornate style of art, architecture, and music that flourished in Europe from the early 17th century. “Baroque in itself is multilayered and complex, that kind of style speaks to the way the liquid is because it has different layers to it,” says Molina. The complex flavors and textures are brought upon by the blend of the different Sherry Casks which brings another dimension to the Don Papa’s growing portfolio. It has a viscous and velvet mouthfeel and has a warm and long finish. The original vanilla notes of Don Papa blend still comes out on the notes with additional fruitcake flavors, hints of plum, grape, nut, chocolate, and fig from the sherry cask. DrinkManila suggests to drink the liquid neat rather than with ice to experience its full flavor. For cocktail suggestions, the Sherry Cask Finish will be an excellent base for spirit-forward recipes like Manhattan, Rob Roy, Boulevardier, and Old Fashioned. Don Papa 7 Years “The limited release of the Don Papa Rare Cask gave us the confidence to release a new bottling, says Garcia. The Rare Cask was the first innovative product from the company, and it sold like hot cakes before even reaching the shelves. When Rare Cask launched in France, Italy, and other parts of the UK, the bottles lasted only for two weeks in the shelves, and a lot of bottles ended up in auction sites, some even reached up to €500 (P31,173) from the original retail price of P3,750. Don Papa is planning to rerelease Rare Cask this year. For this batch, they hope that the bottles will reach the shelves to give everyone access to the liquid. Don Papa Rum 7 years, 10 years, and Rare Cask The Sherry Cask Finish will release 16,000 bottles globally and only 1,000 bottles will be sold locally. Expect the bottles in select retail outlets, hotels, and bars this July. Sherry Cask Finish retails at P3,500 per bottle.
