Welcome the brand new year with a Midnight Sparkler!

In the Philippines, locals believe that round fruits for New Year symbolize coins or money and are displayed at the New Year feast as a sign of wealth and abundance for the household. This bubbly cocktail uses the round fruit, Clementine oranges, known locally as kiat kiat to welcome the year with good luck, fortune, and prosperity. 

This spritz drink is a great way to toast to new beginnings! The cocktail has notes of tropical flavors mixed with sweet citrus and just a touch of bitterness. 

Ingredients:

20 ml lambanog (use only lambanog brands from FDA registered bottles and credible local brands)
5 ml Aperol
6 pineapple cubes, muddled
1 kiat kiat (with skin) , muddled
top with sparkling wine, chilled

Directions:

Muddle pineapple cubes and kiat kiat. 
Put some pieces and juice in the champagne flute
Pour lambanog. 
Top with sparkling wine. 
Float Aperol on top. 
Garnish with pineapple leaf.
