DrinkManila launched #TipYourBartenderPH as a way to help out our local bartending community during these trying times. Every Friday, for #DMHappyHour, we’ll be showcasing a bartender who will share a tasty cocktail recipe that viewers can do at home, as well as promote a small business that they’ve started during the quarantine. People can show their love by supporting the featured bartender’s business and directly sending them a tip.

This week’s featured bartender is Ed Deveza of Le Bar at Sofitel Philippine Plaza Manila. Ed, who’s been in the bartending game for around seven years, was inspired by fellow bartender Jerry Miranda invited him to a Diageo World Class event. He saw a lot of local bartenders doing a great job during the competition, so he decided to change careers and go into bartending.

Ed was working at Le Bar at the Sofitel before the pandemic hit. He and other employees decided to go back home to their provinces since operations were ceased during the lockdown. He headed back to his hometown of Lucban, Quezon. During the mandatory 14-day municipal quarantine before he could go around the town freely, he thought of how he would earn a living while also helping out their local community. He brought together his skills in making drinks and their local farmers’ crops and created Kinse Kinse. 

“Looking at the greeneries and wide fields in our town, I saw how blessed we are with nature. Farming is the main livelihood of our local people, so I thought of incorporating the skills that I reaped while working as a bartender to the products that we reap from nature,” shares Ed. “Creating fresh and healthy drinks using the harvests of the farm such as rice, fruits, and vegetables is the best idea. In this way, I could help the local farmers sell their produce, help the local people to stay healthy while at home, and help myself to earn income for my family.”

Kinse Kinse, named after the 15 famous columns outside Lucban Church said to have been built to block the Japanese army from entering the church, is a line of detox drinks made from ingredients local to Lucban. He currently has three variants: Luntian, Kahel, and Velencia, priced at Php 75 each. His biggest customer group are frontliners, who drink his detox tonics to help boost their immune system

His healthy and delicious drinks are available in Lucban, Quezon and surrounding areas. He might bring the drinks to Metro Manila at some point in the future, and will then partner up with farmers from nearby provinces so as to not have a heavy carbon footprint.
