When you want afternoons to have a refreshing kick, whip up this fresh and herby cocktail. Best served in a balloon glass to enjoy its floral and citrusy notes.

It’s crisp, tart, and perfect to start your hot afternoons.

Ingredients:
50 ml Arc Gin
25 ml flat parsley syrup* 
10 ml lemon
15 ml lime juice
10 ml Yellow Chartreuse
5 cubes cucumber (or 30 ml cucumber juice)
1 cube ginger
2 thin slices Granny Smith apple
How to make a flat parsley syrup
Bring water to a boil. Add the sugar and whisk into the boiling water. Continue whisking till sugar dissolves.
Add four fresh sprigs of flat parsley (5-7 inches long) and let it boil for 30 minutes. 
Remove the herbs and set aside to cool before transferring to a jar.
Directions:
Muddle ginger, cucumber, and apple in a shaker. 
Pour ingredients, add ice, and shake. 
Double strain into a balloon glass. 
Garnish with aged semi-soft cheese and parsley.
