Hump days deserves a fun cocktail. Here’s a recipe that balances the fresh sweetness of watermelon with the spiciness of lemongrass and ginger.

Serve Icy Pop with a watermelon popsicle that you can lick or bite in between sips. You may also dip in the cocktail to add more watermelon goodness.

Ingredients

45 ml Whitley Neill Lemongrass & Ginger Gin
60 ml watermelon juice
2 fresh ginger cubes
15 ml ginger syrup
20 ml fresh lime juice lemongrass cubes
60 ml ginger beer

Directions

In a jam jar, muddle ginger and lemongrass cubes.
Add in all ingredients.
Add ice and stir.
Top with ginger beer.
Serve with a watermelon popsicle. (Paddle Pop Watermelon is available in your nearest convenience stores.)
